To stain, or not to stain? That is the question.

I’m making a set of Adirondack chairs out of cedar for my patio. I love the look of natural cedar, but as time goes on I know this will grey a bit. Also being outside in morning to early afternoon, the sun will hit and I know UV rays have an impact as well.

My question is, would you guys stain it? Or just poly coat? Or nothing? I can’t decide how to finish it, if at all. Any input is appreciated!!

I’m trying to refinish a piece of probably 100+ year old red oak. It had I think a shellac on it for many years. The piece above is new red oak. Will I ever be able to get the old wood to be close to the new red oak? I’ve been sanding for a while and feels like it won’t get any lighter… is this like pine where over time it just ages and colors more?
