First time smoking anything

Hy-vee 15lb choice brisket (last one they had, costco only had 2 poor choices)

Lumberjack supreme pellets (loved)

Forgot to get good pictures before the rest, second photo is about 3 hours in.

I got crazy with the fillet knife and accidentally took her down to under 7lbs 😬. Accidentally scalped the fat cap down to nothin so it was my mission to keep er moist.

12 hour overnight in the fridge, set out at 5am, into the smoker at 6am at 180° with the smoke-boost for 2 hours.

Bumped it up to 225 at 8am, sitting around 100° internal

At 9:30 i bumped it to 250° as my bark wasnt getting there, added some shielding around the lean flat, spritzing the edges.

At 12 i was at 150° in the flat so i foil boated it with tallow on the bottom and poured hot tallow over the top with butcher paper over the top to try and save some moisture.

At 2:30pm I was at 180° internal so i bumped it to 285 to try and eat before 7pm

Realized the water pan was sucking a lot of my heat and removed it.

Temps were still stalling out so i went to 300° and wrapped the whole thing in foil

Finally got the point past 205° and the flat to 200° and probe tender at 4:15.

Pouring tallow over the top allowed it to pool and ruined the bark

Breathed 20min then wrapped with hot liquid tallow inside foil and paper and towels and into the cooler until 6:30pm.

Very tasty and smoky, little bit dry but not terrible.
