For sale- 235mm gyuto in 26C3 steel @63 Rockwell. Thin, nibble and well balanced blade with 'substantial' spine tapering from 3mm at the handle to 0.59mm at 10mm from the tip. Convex grind ( very good find release ), Hand sanded bevels to 500 grit, forced patina finish. Polished spine & choil.
