I believe it would be cool and immersive seeing Mason pull the ejection cord or press the button and then seeing his POV flying upwards and opening the parachute.

We could also have enemies and allies utilising it and seeing their seats ejecting and parachutes opening.

Furthermore, if your mech has suffered critical damage to the main torso, Betty could start shouting EJECT, EJECT, EJECT with alarms blaring prompting you to do so. This could be a toggleable setting for the extra adventurous mechwarriors.
