My store stopped allowing me to sub meat

For years, my wife's go-to is the stickball sub turkey for ham. It's never been a problem. I just placed a mobile order, the store called and said they don't do that anymore because they got a new manager and it "messed up the inventory." Is it actually an inventory issue or is it just because the turkey is probably more expensive? Bummed. Also is there more turkey on a turkey and provolone than a stickball? Or the same?
