My wife turned 40. Made this one for her birthday.

Started with a layer of these half-coated in chocolate cookies then a layer of icecream, followed by a layer of chocolate cake and another layer of icecream. Repeated those same four layers again. Topped off with the layer of icecream, decorated with the number 40 in KitKat chocolate and M&M's and Chocolate Maltese balls.

Ingredients

Four boxes of chocolate chip cookies

100g butter

2 packs of finger biscuits

5L icecream

4 packets of M&M's

Recipe:

Line your cake pan with cling film/ plastic wrap, covering the bottom and sides with enough overhang to get the cake out of the form.

The base: two and half boxes of crushed chocolate chip cookies combined with 100g of softened butter.

Firmly line the bottom of the form with this mixture.

Filling and sides: place scoops of icecream as filling, leaving space for the finger biscuits to go around. Neatly arrange the finger biscuits while holding them in place with the icecream by pushed the icecream out to the sides with the back of a spoon. Once all the finger biscuits are in place, fill until you have a layer of about two inches of icecream.

Layer another box and a half of crushed cookies and M&M's on top of the ice cream and then add another layer of icecream an inch deep.

Top it off with three bags of M&Ms.

And done.

Leave in freezer to set.
