I just got my Fellow Aiden set up today and brewed my first real cup with it. I used Black & White “The Natural,” ground fresh on a Rancilio Rocky, weighed 18 g of coffee, rinsed the filter, and brewed a 10 oz single cup using the JBC Twisted V.9 profile because it seemed like the closest match available.

I’ll be honest: I was skeptical that an automatic machine was going to get anywhere close to a good pour-over. But this was hands-down the best cup of machine-brewed coffee I’ve ever had.

The cup was clean, fruit-forward, and surprisingly balanced. If I had one minor tasting note, it was just a hint sour / slightly under-extracted, so next time I’m going to go a little finer on the grind. But for a first cup, I was genuinely impressed.

Setup was a little fiddly, especially getting the app connected to Wi-Fi, but once that was done, the actual brewing process was easy. It felt like I got most of the control and precision I’d want from manual brewing without standing there babysitting the pour.

Expensive? Definitely. But after one cup, I get why people are excited about this thing.

(Yes ChatGPT assisted me in writing this my first Reddit post. After it helped me fight the app issues and get everything dialed in thought it was in a good place to know how I felt.).
