Off road bike trails

I am looking for suggestions for some off road bike trails within an hour of Sioux Falls. Wouldn't mind doing a weekend camp to hit a few. I am very new to off road riding and just getting back into cycling in general. I bought an e-bike a couple months ago and got hooked on riding again and just got a new gravel bike. I am 36 and over weight so trails that won't kill me are preferred but hey if it's worth the ride throw it out. I know about all the FAST ones and plan to check those out but I know I will stay much more motivated to check stuff off a longer list. My only friends that ride are my 11 and 13 year old sons so if you have any suggestions for beginner friendly rides off or on rode I would appreciate those as well. Thank you!!

Entry level 58cm drop bar bike

A few months ago I bought an ebike and fell in love with riding again, lost 50 pounds and I'm ready to lose the motor but i am struggling to find an affordable, reliable drop bar bike in my size. I am 6 foot tall with a 33in inseam so I sit right on the cusp of 56-58cm and 58 feels just a little more comfortable. I have ADHD so bounce between hobbies like a child of divorce does houses so I am trying to stay in the $500-$800 dollar range because let's be real I might be bored with this before I get it put together. I know with that budget I am not looking at top quality but I figure if I ride it until the wheels fall off I've earned a bigger budget for the next one. I do still weigh 240lbs so need a frame thay can hold all my greatness.

What are your suggestions?

Edit - I did see these ones online but I am leery of Walmart bikes.
