I've been smoking tri tip on my traeger using the traditional traeger recipe (225 for somewhere between 1-2 hours) then an additional few minutes at high heat to get a reverse sear. I've been getting the right temperature and a red juicy center. But instead of tender, it's been more rubbery and chewy. I'm not sure what I'm doing wrong?
