Howdy BST. I’ve recently acquired a TxK 240 and thats pretty much endgame for me on wide-bevels. These aren’t slouches by any means though. The Kagekiyo is practically brand new, did some test cuts on some carrots. The Choyo has been used twice in home meals for my family. Neither have been sharpened. Choyo purchased from Chef’s Edge in December and the Kagekiyo from JKI in April. Details, specs, and price I paid are in the links below. Just saw the Choyo went up in price. I paid $633 for it.
