Adopting community cats, when to get insurance?

I've been part of a small group taking care of the cats near my workplace. I'm now in a position where I'm going to adopt two of them.

One is at least 6 years old, male, already neutered, overweight but has slimmed down a bit with regular wet food. The other is around 1 year old, male, to be neutered at first vet visit.

I've been looking at various pet insurance options and getting quotes (mainly ASPCA, Embrace, and Spot). My biggest question is when to buy the insurance. I could get it before I take them to the vet but not sure how long it'll take for me to get them there. I'm still working on getting the older one used to being in a carrier as he trusts me a lot already and have plans to trap the younger one because he's very skittish.
