My desire for tomato sandwiches will never die!
Tonight's menu:

Sesame seed focaccia, baby lettuce/greens, pickled red onions (from my last jar...gotta make more soon!), cottage cheese, cucumbers, black pepper, dill
Sunflower multigrain bread, spinach, cucumbers, chicken salad (the last of my leftovers from a couple days ago), tomatoes, black pepper, dill
I swear to gourd, I'm gonna get through my stash of frozen discount breads and my recent excessive score of fresh farmers market dill if it's the last thing I ever do.
My teenager started his first paying job today, a summer internship. I am very very proud of him!
I was going to order his favorite pizza or fancy sandwich or something to celebrate when he got home, but I don't have a huge budget right now...so I decided to do the fiscally responsibile thing and slap together a lil snacky plate with stuff I already have on hand.
Clockwise from the top: salami, Club crackers, Twizzlers, colby jack cheese, Babybel cheese, pretzel crackers, pepperoni wrapped string cheese, shredded rotisserie chicken breast.
In the middle: lemon and lime wedges (he likes to suck the juice out of sour citrus straight up).
Not pictured: huge bottle of ice water because it is wicked hot here.

Sandwich 1: sunflower multigrain bread (toasted), tuna salad (canned tuna, mayo, pickled red onion, celery), pico de gallo
Sandwich 2: bagel (plain, toasted), cream cheese (also plain), pico de gallo
Side dish: tuna salad, cottage cheese, sesame spinach, pico de gallo
Dank chicken salad and fat maters on fantastic focaccia.
This was a great way to use up the last of the rotisserie chicken I bought a few days ago.

Super delicious and super low effort! I bought both breads from small local businesses. And I could have made the chicken, tzatziki, and pico myself...but I didn't want to, so I didn't do that.

The sammich was sooooooo good but I definitely made it a bit too tall...I had to smoosh it to be able to bite into it without dislocating my jaw.
Why make just one tomato sandwich when I can make a hat trick of tomato sandwiches? ​
This was last night's dinner, and it only took me me about five minutes to throw it all together. ​
