A tribute to a hellish week

Started a new job. I’ve had a hellish week so far and it’s not even over yet. This lunch has about enough care as my attitude currently.

Chicken salad, tortilla chips, sriracha and cold coffee. Bonus points for my Christmas mug, just trying to find any joy today haha.

Making the mundane feel a little fun

It is hot, but I wanted my dinner to be a little fun.

The hearts are turkey and cheese, the stars are ham and cheese, accompanied by pasta ranch salad (mini shells, ranch, hard boiled egg, tomato, cucumber, real crumbled bacon bits, finely shredded mild chddar) and potato salad as close to my mom's as I have ever been able o get (potato, mayo, mustard, egg, dill relish, celery seed, salt and pepper). And a small piece of strawberry shortcake.

Sometimes toast, guacamole, feta and cherry tomatoes with a bit of salt is all you feel like for dinner. And it’s delectable

I didn’t know this subreddit only let you post one photo, damn. No close up yall.

Trader Joe’s tinned calamari in olive oil.
LOTS of lime juice, smoked paprika, pepper with some corn chips. I didn’t expect this to be as good as it was.

Before you say “hey 2morrow, there’s a BOWL here”
I made it, so I make the rules ok

Oyster girl dinner

Oysters were $1 apiece (with free shucking!) so I bought 3 dozen and then spent 10 minutes whipping up a few sauces with stuff I already had at home.

Oysters:

Rappahannock Atlantic

Salty Hog

Atlantic Olde Salt

Atlantic Blue Point

Sauces:

Something sort of like a mignonette but with blackberries and lime juice

Basically tartar sauce but thinner and orange and smoky

Garlic honey mustard

I cant seem to find anything that isn’t a fruit or veggie that won’t trigger my pregnant lady acid reflux. So tonight’s snack/late late dinner is celery and carrots with an obscene amount of ranch and some watermelon 🍉

Protein pasta with extra protein from beef. YooHoo because my blood sugar was so low it was off the charts. I watched it slowly go down as I played Overwatch. 👹

Experimenting with breakfast! #14

Guys, thank you so much for all the support you’ve shown so far! 🥹 It really motivates me to keep experimenting, and I hope you’re enjoying these breakfast creations as much as I am!
Today’s experiment: Matcha Yogurt Bowl with Cherry Jam
Recipe:
Add yogurt to a bowl (I used 0% fat Greek yogurt) and mix in a little matcha tea until smooth.
In a separate pan, combine seedless cherries with a little honey. Cook over low-medium heat, stirring occasionally, until the cherries become sticky and reach a jam-like consistency.
Top the matcha yogurt with the cherry jam, chopped walnuts, and some dark chocolate.
And that’s it! Would you try this experiment? 😊
