Why there aint a proper Breakfast Restaurant (or even stall) in Jodhpur for common people?

Dont bring Kachoris,Khaman. Like in South we have healthy options like Idli etc available cheap served from 6 AM. Ofcourse Poha stalls are here and there but doesnt seem appetizing to me
