I ate that missing piece before I could take a picture and I also ate another quarter loaf with some butter.

100g starter
500g all purpose flour
380g water (warm)
10g salt

Mixed starter and water 1st. Then flour. Knead and salt and knead. Rest 30mins between each.
Stretch and fold 4-6 fold each time (for 4 or 5 times) every 30mins
Left at room temp(68C) for 6-7hrs after the last stretch and fold
Shaped and left in fridge for 2ish hours (couldn’t wait any longer)

Oven preheated 450C with enameled cast iron.
450C for 30mins (added few ice cubes) with lid
450C for 15mins without lid (checked internal temp)

Waited 35mins to cooldown before I tried to cut a slice.
