I wish there was an official Minecraft server/servers

I just wish I could hop in somewhere for an hour or two daily and play a completely vanilla game (with some protection features just enough to prevent and punish griefing and PK) with some people, but not onto a completely random server owned by God who knows who and moderated based on literally just vibes and mood. Lack of official Minecraft servers to play really makes me play the game way less than I would be willing. I'd be more than happy to even pay couple $ a month for access.

Looking for: game with good exploration focus but not procedurally generated world

I'm looking for some games where I could extensively explore the world, do some side missions, learn the world's story, but not with procedurally generated content and with clear end objective that finishes the game. In addition I would like to be free of:

- Inventory/equipment management

- Complex skill trees (simple linear ones are fine)

I'd like it to be relatively modern (released within last ~20 years)
