Any tips on octopus?

I had the most delicious char grilled octopus years ago and got the inspiration to try my own version when I saw a couple of cooked tentacle sections at the market. Flavor was on point but as a total package, a swing and a miss.

I didn't get char. It had medium high chew (the one I had years ago was stupid tender). Anyone have the cheat codes??
