Pulled pork method check

Hey all, I’m hosting a shindig this weekend and will be smoking a couple butts for pulled pork. I have only done pulled pork once, I’m more of a brisket guy but I figure the method is fairly similar. I’m using an easy bake oven, I mean a pellet grill. I figure throw them on at 225, the biggest one is about 7 lbs so I figure I’m in for around a 14 hour cook. Wrap at around 165, and let cook till either probe tender or 202 degrees, let it rest till the temp falls to 165 and shred. Am I thinking this through correctly?

My family including my extended family are apparently really good at hiding predators. I was visiting my uncle over the weekend (he’s the youngest of six and the black sheep of the family) and we were having a few drinks in his yard and smoking some weed and were talking about our extended family when he got this look on his face and said “I don’t think I should tell you this but…your uncle Dave wasn’t allowed to take nieces or nephews in his semi truck because he got caught molesting one of his nieces on his side of the family”. This was a guy who I really looked up to and was the fun uncle that everyone all loved. I guess it’s a good thing he died a few years ago.
