Potatoes, Cut into bite sized pieces, boil for 10-12 minutes. Drain when soft and add dressing. Set aside.

Dressing-

½ cup olive oil

¼ cup balsamic vinegar

½ tsp jarlic

1 Tbs mustard

1 tsp Italian seasoning

Salt & Pepper

Salad Add-ons

Red onion-thinly sliced

Soft Mozzarella, cut into bite size pieces

Olives, any kind, your preference

Cherry tomatoes, halved

Pepperoni (I used summer sausage), chopped into bite sized pieces

Fresh basil, julienne

For each serving: potatoes with balsamic dressing, onion,

mozzarella, olives, tomatoes, meat, basil. Gently toss and eat.

sloppy joes with tots & side salad

Sloppy Joes with Tater Tots & Caesar Salad

Sauce -

8 oz tomato sauce

15 oz crushed tomatoes

¼ cup ketchup

1 Tbs worcestershire sauce (use gf Lea & Perrins)

1 Tbs yellow mustard

1 Tbs brown sugar

Garlic powder, onion powder, S & P-to taste

Meat-

1 lb ground beef

1 small onion, dice into small pieces

1 Tbs jarlic

onion powder & garlic powder, to taste

  1. mix sauce ingredients together
  2. saute meat and veggies.
  3. Add sauce to cooked meat & veggies. Reduce heat, cover, and simmer on low for 10-15 minutes. Add a little water if sauce is too thick.

Tater tots – cook per package directions

Romano cheese discs – shred the cheese.

On medium heat, in a hot, nonstick frying pan place approx. ¼ cup of shredded cheese in a thin layer. Allow cheese to melt and brown slightly on the underside. Carefully flip and allow this side to brown. Remove from heat and let the cheese disc come to room temperature.

Caesar Salad

Romaine lettuce, chopped into bite sized pieces

3 cherry tomatoes, slice in half

Red onion, a few slices

2 cucumber slices

Romano cheese disc, whole or broken into pieces

Caesar dressing, any brand works
