My espresso is too sour and bitter at the same time [Breville Barista Express]
Hi all, I tried a single shot El Guapo Espresso (full city roast) at a coffee shop then got the same beans. It tasted like baked chocolate at the coffee shop but when I tried to make it at home, it tasted like sour burned ash.
I keep my dose 18g and slowly increase the grind size from 5 to 11. Water temp is always 95. My yield increases accordingly 20g to 46g with drop all about 12s and total time around 33s.
But I can't replicate the taste and it frustrates me so much but Idk what I'm doing wrong. It tastes both bitter and sour at the lowest grind size. As I grind coarser, it definitely tastes less bitter and sour but at 11 grind size and 46g yield, I feel like I'm under extracting already and grinding coarser may not fix this. I think the bitterness at 11 grind size is good but it's still too sour. I was expecting the sourness would be less at finer grind size but it's actually way worse.
I would really appreciate any advice! I'm still very new to this so I apologize if I misused any terms
