Braze-on rear derailleur hanger

I've got a few basket case bikes which I want to refurbish, more for fun than anything else. I want to add derailleur hangers to a couple of them to go from single speed to a more usable 9-speed.

Are there any off-the-shelf braze-on hangers? I thought I could take a replaceable hanger and file it to fit, however I can only find those made out of aluminium, so no luck there. Or am I better off buying an M10x1.0 tap and rolling my own out of mild steel plate? Any ideas?

I want to dip my toes into the minivelo world.

A few months back I was gifted a 20" Raleigh Grifter. It lived in a pile of scrap metal for a decade before it came to me so there's more rust than you see from the photo, however the frame seems sound enough to make a minivelo out of it. A very heavy minivelo but I can't pass the opportunity!

Probably the best way to get reasonable ergonomics would be a long quill stem, something like https://hollandbikeshop.com/en-gb/bicycle-parts-city-bike/bicycle-handlebar-stem/stem-stem-parts/stem-fixed/ergotec-cat-2-stem-25-4mmx300mm-black-silver-361767/ .

Has anyone here built a minivelo with such a long stem, and how sketchy is it when riding hard?

In addition to that I'll probably re-space the frame to fit easily available folding bike wheels. I want to run 50mm tyres so I'm looking for relatively wide wheels. What rim width are you guys running?
