In my own personal and honest speculation I really believe, by the material we've been given, Dozan was a giant (probably not from Elbaph), as well as he was the guy who made emeth attack the Holy Land 200 years ago.

200 years ago in the one piece world is the timeline we know practically nothing about. (And it's the time period of great importance i-e fishmen joining the WG etc)

If Dozan is/was(dead prolly) a giant this explains the giant Straw-hat.....
