Balancing Plates?

Pretty new to FOH work. I have a part-time job at a wine bar and am a runner most days. I find it difficult to hold more than two plates at a time; sometimes, I manage to put 3 on a platter. We also use these wooden boards for breads and cheeses and such. Stuff slides around on it really easily.

End of the day, I figure it's better just to get the food out without it spilling/falling but it's not ideal. I definitely got the job on vibes because everyone else is a food service veteran so I feel bad when people offer help - I'd like to pull my weight! The GM tried to show me like balancing plates on my forearms (???), but I'm just not sure I can do that. Anyways, any tips, tricks, etc?
