In handcuff struggles, why doesn't the cop grab the wrist AND the elbow to better control the subject's arm?

I've seen a lot of youtube / facebook videos where the suspect starts to struggle against being positioned, whether it's positioned against a wall, or against the patrol car, or belly down on the ground.

In all of them the cop grabs only the wrist, which means the suspect is able to use their whole arm and body to pull and twist and resist and flail their whole arm around.

In my martial arts training, you grab the wrist AND the elbow so you can direct pretty well where the rest of the body goes.

Obviously you're not going to flip them or body slam them, but you would have much better control if you grabbed both.

I'm sure many cops have thought of it, but they don't do it, why not?

Since everyone who's reported an NDE has (by definition) returned, then they may have heard someone say the classic "It's not your time, you have to go back".

My question is, has anyone ever, ever reported what great super-important deed they came back to do?

Did they save a drowning child? Founded an orphanage? Invented the cure for cancer?

Most experiences skip to talking about how now they're not afraid of death, but they never, ever say what the big huge point of coming back was.

Suppose I really don't want to come back. What for???? Just to suffer more? Suffer longer?

What was the big super-duper point of coming back?
