There are a million billion cookie recipes out there but is there a pastry or baking book that goes in depth on the various elements or ratios of ingredients that have specific effects on the final flavor or textural properties of cookies? I’m thinking of something akin to Dana Cree’s “Hello My Name Is Ice Cream” which is great even if you don’t like her recipes because of how detailed she is about the science. Thanks!
