Salmon Scramble with mixed geens

I had leftover poached salmon from last night that needed to be leveraged. I added tarragon and togarashi to season two farm fresh eggs and combined the lot.

Cooking the mix as low as the burner would go until the eggs were dry to my taste, no need to overcook anything. Added mixed greens with some of my best Greek oil and some fancy Italian vinegar to complete the set. Don't forget the Parmesan to garnish.

Review: Not bad, came together quick and nourished me for lunch. I always enjoy combining left overs into something new. I might increase the egg to salmon ratio and look for some kick like chilli crisp next time.
