Extending functionality of Text Substitution on Mac

Text substitutions are useful on any device but my focus is on a Mac. I am trying to build in calculations into the text substitutions to get an evaluation, rather than a direct one to one output.

To date it's only been useful for inputting characters that are not normally available on a keyboard or keypad on an iPhone or iPad. Such things as ≅ {approximately equal}, ↓ {decline}, Ø {diameter} etc are all useful but are a straight one to one translation.

But not I want to try getting calculations or lookups to work. The first to try is today's date.

Does anybody know how to turn a string into the expansion of "Today's Date"?
