Collisions on racing tracks

How do games do collisions on racing tracks? Things like Mario Kart for example, the tracks are extremely smooth, but some engines seems to have trouble with concave objects (been hitting my head on a wall trying to export a test i made onto roblox)

It seems simple, i can make the tracks, although not nearly on the same quality, but the collisions are just off, never smooth, some random bumbs from nowhere.

And i have had similar experiences with collisions being off on godot and unity, why is that? How do devs fix this?
