Recipe:

1. Boil the pasta in salted water until al dente. Reserve about 1½ cup of the pasta water and drain the rest.

2. Heat oil or butter in a pan. Sauté the garlic for 30 seconds, then add the onions and cook until light golden.

3. Add the capsicum and cook for 2-3 minutes.

4. Add the tomato puree and cook for 5-7 minutes until the raw smell disappears.

5. Mix in the red chilli powder, turmeric, coriander powder, salt, and garam masala. Cook for another minute.

6. Add ketchup (if using), oregano, chilli flakes, and a little reserved pasta water to make a smooth sauce.

7. Add the cooked pasta and toss until every piece is coated. Cook for 1-2 minutes.

8. Finish with black pepper and grated cheese. Garnish with coriander or basil.
