Kitchen remodel - feedback welcome!

Kitchen remodel - feedback welcome!

Hi! We're remodeling our kitchen, and after a few days dipping my toes into the topic of lighting I'd appreciate some feedback and suggestions with our lighting layout. I'd like to do something that has a bit of thought behind and helps make the rest of the new kitchen shine.

This is an ranch home built in the 60s with 8 ft ceilings, and loose cellulose insulation on the attic. We're coming from the original lighting layout: two pendants and a fixture above the sink, all with basic bulbs. Almost anything we do will be a huge upgrade. I'm aiming for good light on the counters, minimal glare, and some accents with a modern look.

Based on a lot of the posts in here, I'm strongly considering the ELCO Kotos HC, labeled A1-A9 in the diagram below. I like the smaller fixtures, but it seems like 2 in can be a bit trickier given the size of the hole, so I'm leaning towards 3 in deep reflectors. There doesn't seem to be a big difference between the canless and canned versions. I am a bit worried that 4000 K may look too clinical along the top 50% of the brightness curve... For context, the kitchen palette is light and warm: it will have off-white matte countertops (Dekton Albarium), rift white oak cabinets, warm terracotta porcelain tiles, and a copper hood.

I'm not sure if the A8-A9 fixtures would be necessary, and if they should live in the same circuit. Everything would be on dimmers, leaning towards Lutron Sunnatas.

P1 & P2 are two pendants with glass housings on the sides of the copper hood. Since those lightbulbs will always be visible, I'm considering the EmeryAllen G25 6.0W DTW Clear (LED Filament) bulbs. Any other suggestions?

A7 could potentially turn into an accent fixture, eg if we added some artwork on the wall over the stairs. It may be worth it to wire it separately for flexibility, and maybe it'll look better if it turns on with the rest of the cans so that the stairwell doesn't feel like a dark hole.

Any recommendations for the under cabinet lights (U1-U2) or thoughts on adding LED strips under the toe kicks or the L-shaped island overhang?

Do the locations of the fixtures make sense? Would you change any of them? Add or remove something?

The dashed circles represent the size of the Koto's beams (60 deg lens) at countertop height.

Thanks!
