St Louis style pork ribs - no wrap

I'm going to smoke a rack of St Louis pork ribs tomorrow using a combo of mesquite and hickory wood and don't plan to wrap them at any point. Looking for advice on time and cooking temp. I think I've seen some people say they do 5 hours at 275. Should I sprits or mop them at any point? Sauce the last 30 min or so? Any advice is appreciated. Thank you!
