Romania - acacia blossom "doughnuts"

These are popular in spring and we can just have them once a year, since the blossoms don't last long. We pick fragrant ones, and use a batter similar to pancakes, only a little thicker. Edit - I shared this because I thought it was interesting, but please don'try anything that you're not 100% sure is safe, as choosing the wrong plant could be harmful. There are many types of acacia, this one is known as false acacia, and we have generational knowledge on what is safe to eat from the plants around.
