Some early thoughts as a first time viewer

I'm on season 6 and loving it so far. But I have a few thoughts. How on earth would you go onto this show and not have a proper signature dish? And I don't know if the menu changes in future seasons, but how could you be on this show and not have scallops/risotto/steak on lock? Every season so far has had the same staples that no one can cook properly. Also, when the food reaches the customer and it's raw, isn't it Gordon's job to catch that before it gets served? Had anyone called him out on that? And finally, why doesn't the show attract actual top tier chefs when the prize seems so good?
