Looking for a RPG to invest some time into

Hey so I'm having trouble picking an RPG to play, I mainly play competitive games atm like CS2, Deadlock, and LoL but want something to relax and put time into. Previous RPG's I've played and I'm a big fan of are WoW classic, Fallout 3/NV, Skyrim, FF7 remake + FF15/16.

-I don't know how I feel about playing a turn-based game but I'm thinking about FF6 or Baulders Gate 3. I did enjoy a lot of pokemon as a kid but I'm not sure that type of gameplay will keep me captivated today.

-I also played Cyberpunk when it first came out but I really wasnt a fan of the story/RPG elements, side quests didnt feel meaningful and my decisions didn't feel like they mattered compared to a game like fallout or skyrim, but I'm willing to go back because I heard the game got massive updates (not sure if they pertain to what I'm talking about tho).

-Other games I'm interested in are Witcher 3 and Bloodborne, never been a big fan of the souls like games and I havent played Elden Ring (I've watched a ton of gameplay on it the world design is insanely compelling to me).

If anyone has any recommendations of a game that I must play or sway me on any of the games I talked about above please give me your opinion.
