my kitten wont stop climbing stuff

She is 8 months old. Since we got her, she's had a bad habit of going anywhere and everywhere she's not supposed to. She jumps on counters, on curtains, I have a hoodie wall she just recently started jumping on, TV stands and soooo much more. She has a cat tree and toys, and we even gave her a hammock on the window for her to sit on. She likes having the window open to smell outside and bathe in the sun.

She jumps and "flies" all over the place at the most random times. She's doing this mainly around 11 pm (after we go to bed), in the morning, starting around 3-5 am, 9 am, 2 pm, 5 pm, 8 pm, then 11 pm again. I don't know the last time I've gotten a full 8 hours of sleep... I don't work, so I'm with her all day, every day. We yell "NO", have tried to spray her with water, we lay her down with us to try to calm her down, we've tried the tin foil on the counters, we've tried what feels like everything, and I don't know what to do anymore. She has some other quirks, like "swimming" in her water dish for whatever reason.

Her mom lives upstairs, and we avoid putting her up there for personal reasons. All she does is cry to go up there, and if we don't give her what she wants, she throws a hissy fit and breaks stuff. It's to the point where my boyfriend is considering putting her up for adoption because she's either going to break something we can't afford to replace or hurt herself, which we can't afford constant vet visits. I love her, and when she is "chill" or playing with her toys, she's the most perfect kitten in the world, but the constant crying and breaking stuff is getting really hard to deal with mentally and financially. We both grew up with cats, but my cat passed 2 years ago and was 15 (I was 21), and his cats spend more time outside than inside. We are just desperate for help at this point. TIA
