Week 27: World Cup - France vs. USA - dream finals for this poster and dueling grilling traditions - Smoked candied ribs and Le Grande Aioli

Smoked and sauced barbecued ribs versus Le Grande Aioli grilled shrimp lobster, tail fennel, spring, onions and eggplant, with a creamy garlic dip and a crisp white wine.

Smoked the ribs for 8 hours with bearded butchers, sweet barbecue rub wrap them after six with butter and spray them with a mixture of hot honey, apple cider, vinegar and rice wine vine vinegar. Finish them on a grill with barbecue sauce. So I could get the caramelized rib or candied rib, which the family loves.

La grande aioli is grilled lobster, tail and shrimp in their shells with grilled fennel, eggplant, and spring onion, served with creamy garlic dip and a crisp white wine.

What a great counterpoint and a great comparison between the two grilling cultures.

Week 26: High Fiber - Giant lima bean salad with lemon garlic and olive oil.

Giant lima geans, boiled with baking soda and salt, cooled and mixed with fresh lemon juixe, garlic, and olive oil. Simple, high in fiber, and great with a grilled steak and corn for a nice change of pace for the summer.

Week 25: Garden - Yi style chinese bbq with eggplant, onions, spring onions, shishito peppers, mushrooms, chicken wings, and lamb chops

Kao Shao style or Yi style bbq of eggplant, mushrooms, peppers, spring onions, chicken wings, and baby lamb chops.

Marinated in soy, baking soda, sesame oil, avocado oil, garlic powder, and salt/pepper.

Rub is cumin, szechuan peppers, salt, peppers, chili pepper, cumin, and salt/sugar/pepper mix.

Grilled on skewers - mushrooms broke, lots of rendering

Loved the marinade and rub, but too much rendering caused flare ups and a little too much char.

​

Served with lettuce cups, white rice, ssamjang style sauce. Rioja reserva because why not.

​

Think longer marination and lower flames would be better. My son who is a meatatarian (yes, it is a conscious choice) appreciated the chix and lamb, my wife and I liked the veg.

Week 24: Tarot -- Empress's Spring Dinner - Grilled duck breast, cherry glace de viande, celeriac and potato puree, roasted trumpet and oyster mushrooms, and a nice Burgundy

I tried to come up with the symbolism of the tarot -- here goes -- The Empress - abundance - a spring inspired meal. The emperor - the strength of crispy skin duck breast. Death/temperance - transformation and balance -- meat and wine reduction balanced with sweet cherries, the hermit - exotic wild mushrooms, the world - complex mashed celery root, potato, and cream/butter mix.

Week 23: Coffee - grilled lamb loin with red wine coffee reduction, grilled corn and sauteed mushrooms.

Was for something different to put coffee in. I did a red wine reduction.Copying the technique done by Follow, we're reducing red a bottle of red wine to a syrup.Adding a little sugar, three tablespoons of coffee and a little sweet sherry adding a reduced demiglass and stock mixture with onions, garlic, rosemary, and homemade stock. I grilled marinated lamb loin with lemon garlic and oil as well as corn on the cob with the ears on and sauteed some mushrooms.Please be kind as my son likes crispy mushrooms. Serve this with a 2019 Rioja Reserva from Marque de Riscsal. Holy cow the sauce was awesome.The coffee added a sense of depth to the red wine sauce, which is worthwhile repeating.

Week 22: 15 minutes or less - side dish: sauteed mushrooms with pancetta, garlic scapes, and onion

This week in Northern Ohio, the garlic scapes were on sale at the farmer's market. What a great opportunity to do something a little different with sauteed mushrooms. I used cremini. I sauteed cultured, butter and dice panchetta with chopped onions, chopped garlic, scapes and quartered cremini mushrooms.

This was a side dish for dinner with grilled strip steaks aged thirty five days, crispy potatoes cooked with panchetta and garlic, a salad of sliced tomatoes cucumbers and scallions with lemon, garlic and olive oil dressing, and a bottle of 2021 rioja.

Mushrooms were a huge hit but were a carnivore family and we love this steak. Because of my deep love for my wife, I offered to drink all of the rioja, but she turned me down.

Week 21 - Symmetry - creative plating with marinated grilled lamb chops

Marinated 2 racks and a pack of t-bone lamb chops with garlic, lemon, and olive oil with shawarma spices and grilled over charcoal. Served with cooked dandelion greens with garlic, lemon, and oilive oil in 3:1 ratio and Montepulciano D'Abruzzo 2020. Great weekend start.

Week 20: jams and jellies - onion and bacon jam with charcoal grilled onglet steak

Could not resist this variation on grilled/carmelized onions.

In round bowl -- bacon batons, onions, shallots, garlic, rice wine vinegar, OHIO medium dark maple syrup, chili flakes. Incredible hit. Try it with grilled meat!! Yes, we live on Ohio maple syrup country.

Served with: sauteed mixed mushrooms, grilled onglet steak, 2x baked potato, cucumber/tomato/balsamic salad, and a 2016 barolo.

Son thought onglet had a wierd texture, ate the onion jam with a spoon.

Puppy loved the steak as did the wife and I.

Week 19 - Tricolor - Very cheffy lebanese cabbage and mint salad

Wife is traditional lebanese and I came close to death calling this a lebanese cabbage and mint salad.

Red cabbage, carrot, green onion, mint, garlic-lemon-olive oil dressing with dried mint came out remarkably similar to green cabbage but the color....

Served with smoked pork rib chops and sauce robert with homemade stock and homemade lactofermented mustard.

Son and wife loved the chops snd sauce but did not approve of the cabbage color.

Week 18: Bucket list destinations: Thai stuffed chicken wings and sweet chili sauce

This was a combo of "Here we come - 4 Seasons Ko Samui " and Dierks Bentley - What was I thinking"!

Used Hot Thai Kitchen recipes - shout out to the goddess of Thai food!

Stuffing and deboning these puppies is a test of fine motor skills. Came out awesome and worth the work!

It is our fourth anniversary of adopting our beloved german shepherd. So I combined the anniversary and alpine to create a southern german /swiss/austrian hybrid with an american accent.

The american accent comes from a little bit of hot honey that we added to the tallow fried schnitzel. Rather than drown it in sauce, we like the crispy crust, so we added a little mustard to cut the richness. This was the homemade mustard for my previous post.

As you can see from the second picture, our shepherd Rex loved it.

Fermented brown and yellow mustard seeds. In a 5%

Brine, for five days at 68f, and blitzed in a vitamin mix with salt, sugar, the brine, and a little vinegar.Turned out awesome.

Put brown butter bourbon and chilled in a refrigerator for a week strained made a great old fashioned.

This was a really fun week.
