I have been gifted 4 crates; 2 apple, 2 orange.. I don't know what to do. HELP

I always provide my neighbourhood delicious treats, and my neighbour graciously decided to give me a run for my baking skills, providing me CRATES of fruit. While I am very appreciative of her kindness, I am feeling a little bit over my head here!

Since yesterday I have been slicing up the oranges and managed to dehydrate 2 large jars worth for teas, have done similar efforts with the apples but as chips. This morning did juice. Then a round of orange posset, and applesauce. This unfortunately, barely made a dent in the overall stockpile. I have about 87 apples left, and 150-ish oranges (stopped counting). I have looked at other recipes, but I run into the problem that the recipe only calls for 1 or 2, not a vast majority. I do not want to waste anything, but have also reached an impasse where I need assistance! Please give me recipes that call for large quantities of both (that you have tried, tested, and know rock your socks off).

I am open to trying new things; jam, marmalade, canned-whatever, soup, other beverages, etc... The only thing off limits is cooking with red meat, as we are a poultry house.

How do these stones work, and how many will I effectively need? I'm feeling a bit confused. Is it 1 legendary stone per 1 legendary gear, and once capped, then you use a mythic stone and it turns the gear into a mythic that requires another slew of upgrading until cap?
