What is the difference between a tube amp played through an IR and a modeler or plugin?

I'm ignorant on this matter, as I never played a tube amp through an IR, but it seems counter intuitive to me that someone would buy a tube head that's obviously too loud to be played at home, specifically for the purpose of playing it at home, and only ever play it through an IR running into a pair of studio monitors. Wouldn't that take away the entire point of having a proper amp to "move air" in the room and get the tube response? Is it just for the sake of having a badass looking amp head?

I'll probably sound stupid and get downvoted, but...

I've been taking lessons with a local teacher for 6 months or so after being self taught for a while.
He's taught me a lot when it comes to theory and soloing, overall he's doing an alright job of giving me a tailored "roadmap" to follow in order to get better and explaining each topic in detail. The thing is, he never gives me any pointer whenever I ask him for feedback.

For instance, if I have a problem with my picking and I ask him a technical question about how I should go about playing a specific lick, he just tells me to practice more, refusing to even take a closer look at my hands altogether.

Sometimes he highlights certain issues in my playing, and while that's helpful for me to know what to focus on, he never gives any solution or correction, only critiques. Is this the common way to do it? This is the only teacher I've had so I don't really know whether this is standard and expected.

Have you guys ever been in a situation like this? Would you recommend that I look for a new teacher?

Tim Skold played this guitar live on Radio 1 (UK) in 2007 and I'm absolutely in love with the way it sounds, especially with how deep yet tight and punchy the bass is. Could it be a gibson hummingbird?
