Carrot Cake with Cinnamon-Walnut Frosting

This one came out so moist, soft, and packed with cinnamon + walnuts. The frosting on top makes it even better. 😍

Ingredients

Cake:

  • 2 cups all-purpose flour
  • 2 cups finely grated carrots
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chopped walnuts

Frosting:

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, cinnamon, baking powder, baking soda and salt in a bowl.
  3. In another bowl, beat the eggs, brown sugar, white sugar, oil and vanilla.
  4. Slowly add the dry ingredients and mix until just combined.
  5. Fold in the grated carrots and chopped walnuts.
  6. Pour into a lined baking pan and bake for 35–45 minutes, until a toothpick comes out clean.
  7. Let the cake cool completely.
  8. Beat the cream cheese and butter until smooth, then add powdered sugar, vanilla and cinnamon.
  9. Spread the frosting over the cooled cake and cover with chopped walnuts.

Instructions

  2. Grease a heart-shaped cake pan.
  3. Whisk together the flour, baking powder, and salt.
  4. In another bowl, beat the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, then mix in the vanilla.
  6. Gradually add the dry ingredients, alternating with the milk. Mix just until combined.
  7. Toss the raspberries with 1 tbsp flour, then gently fold most of them into the batter.
  8. Pour the batter into the pan and scatter the remaining raspberries over the top.
  9. Bake for about 35–45 minutes, or until golden and a toothpick inserted in the center comes out clean.
  10. Let it cool before slicing.

Homemade Raspberry Cheesecake 🍰❤️

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tbsp sugar

Cheesecake Filling

  • 24 oz (680g) cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 tbsp all-purpose flour

Raspberry Topping

  • 2 cups fresh or frozen raspberries
  • ⅓ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Mix the graham cracker crumbs, melted butter, and sugar. Press firmly into a springform pan.
  2. Bake the crust at 325°F (163°C) for 10 minutes.
  3. Beat the cream cheese until smooth, then mix in the sugar.
  4. Add the eggs one at a time, followed by the vanilla, sour cream, and flour.
  5. Pour over the crust and bake for 50–60 minutes until the center has a slight jiggle.
  6. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  7. Chill in the refrigerator for at least 6 hours (overnight is even better).
  8. For the topping, simmer the raspberries, sugar, and lemon juice. Stir in the cornstarch slurry and cook until thickened.
  9. Let the topping cool completely before spreading it over the chilled cheesecake.

Made this simple vanilla layer cake with strawberry jam filling and a fluffy pink buttercream frosting.

Ingredients:

  • 2½ cups all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • ½ cup strawberry jam (for the filling)

Buttercream:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2–3 tbsp heavy cream or milk
  • 1 tsp vanilla extract
  • Pink food coloring (optional)

I'd probably go a little lighter on the frosting next time, but it tasted great. 😄
