If Service is so "excellent" why is retaliation against not tipping just not doing your job?

If what you're doing is so above and beyond your job description, why is it that when I don't tip, you won't even do that? Instead, you actively go out of your way to not take my order, and intentionally do not pick up my food for hours on end.

instead of cutting out the actual part of your job, why can't you cut out whatever is making your service "excellent" (and I'm not entirely sure what that even is).

Here's what I don't understand about "service"

Did you cook the food for me? No. Do you even care to know my name? No. What communication do you actually perform? Just taking my order the same way you would if you were a clerk. Are you doing anything besides bringing the food to me? And even at that, now that "runners" are a thing, are you even bringing the food to me? What exactly are you doing that is so "excellent" that I need pay more than what the bill says for it? All I want is the dude in the back to cook my damn food.
