Feels like I'm torturing my cat

I adopted a 6-year-old cat about 3 months ago and I'm starting to worry that she's bored all the time. She doesn't seem interested in any toys we've bought. Most of the time she's either scared of them or completely ignores them. She spends a huge portion of the day sleeping (it honestly feels like 20 hours sometimes) and her main activity is hiding under the dining table, which has become her "safe spot."

She's still very anxious in general. If a door opens or closes, she runs and hides. Almost any sudden noise scares her she runs and hides. If one of us approaches her while she's outside her "safe spot", she'll usually run back under the table. She does have affectionate moments and will occasionally come to us for attention, and sometimes she'll meow when she wants company, but those moments are relatively rare.

The only thing she seems genuinely interested in is watching birds on TV.

For people who have adopted shy adult cats, is this normal after 3 months? How can I entertain her if she has no interest in toys? Are there activities or types of play that work well for anxious cats? She is from a 13 pet house should we adopt another cat?

I'm really struggling with my hair it's too long now and I literally have no idea what should I do with it. I'm considering wolfcut but mine is silky wavy so it might not look good on me. What do you guys think I should do wolfcut or try something else? Please any recommendation would help as long it's longer
