Hi everyone! I posted a few days ago looking for some easy and healthy Mediterranean diet recipes for my slow cooker as I begin my journey of eating healthier and taking better care of myself. I got some great suggestions that I’m looking forward to trying, so thank you all so much! In my searching, I came across this slow cooker minestrone that I gave a try. It was so quick and easy and delicious! I’m really thrilled that I have a go-to minestrone recipe now. Figured I would share in case anyone else is interested. The only change I made was doubling the amount of chickpeas to make it more filling.

Hi everyone!

I’m looking to start eating healthier after a relatively longish time of not being able to take care of myself. I work a demanding job full time, have a toddler who likes to be attached to me, and do not have a lot of time to cook. I’ve had the best luck making dinners with my slow cooker in terms of actually having the time to make something to eat, but not all of the recipes I enjoy for the slow cooker are healthy. I’m in search of very easy (dump and go as much as possible) but healthy Mediterranean diet recipes. I would love a good minestrone recipe as well as anything else you’ve got! Websites, blogs, and cookbooks with recipes would be awesome, too. Thank you so much!
