Pad and rotor recommendations for street driven mk8 (no track or autox)

Have 65k km (40k mi) on my stock mk8 pads and rotors and im thinking about replacing them since the pads are getting worn and the rotors have developped a very uneven surface.

For rotors I think I'm set on zimmerman coated blanks. Seems like the most reasonable option and I dont really feel its necessary to go to drilled, slotted or two-piece rotors because of the associated costs and small risk of cracking. But im open to suggestions.

For pads I'm really not sure. The car is driven year round in canadian winter and summer (big temp range). Ideally i would like to get some pads with very linear braking feel. Some more bite than the oem pads would be nice but not if it comes at the cost of lots of noise (especially in the winter when its below freezing) or them being super grabby. On the flip side i also dont necesarily want ultra-smooth and quiet and dust free pads if it means that theyll be a lot mushier than oem. Would appreciate any recommendations or personal experience.
