Smoked deviled eggs

Here is my process for smoked deviled eggs- normal hard boiled eggs halved and separated yolks. Mixup mustard, relish, mayo, paprika, black pepper and some Tony’s Cajun seasoning. Make sure eggs and filling are in smoker safe dishes and cold smoke for 30-40 minutes. I’m using smoke tubes so there is minimal heat and impact in the short period plus heavier smoke. After 30-40 minutes, add the filling to the eggs. The smoke tends to ‘set’ better with a little refrigeration but not all of them make it that far…

I’m also doing 6 smoked scotch eggs for the first time. Whole boiled eggs in the smoker( you can’t really see them) and I’ll wrap in sausage, bread crumbs and cook em in a pan.

I’ll eat normal deviled eggs again because I have an addiction but smoked deviled eggs are my go to for parties and when I get that itch!
