gap in between wall and custom wood counter

Our kitchen has a very custom kitchen counter made of “iron wood”. We removed some trim behind the sink because it was rotting with the intent to add a tile backsplash. In the process we found a 3/4” gap between the counter and the wall.

The tiler recommends adding a 1/4” layer of padding to the wall underneath the tiles, but then the tiles will be more elevated than the windowsill.

Does it seem possible / wise to add a strip of wood and try to match the finish? Thank you!
