I made basil pesto pasta again…but with fresh pesto (so much better than store bought)

So basically, i made a basil pesto pasta before but i got a store bought one. It was good but I have had better pesto pasta before.

So this time, i tried to make it from fresh and now i am not going back. It literally just takes 2-3 minutes for your basil pesto sauce.

Olive oil + parmessan + garlic + cashew + basil leaves => grind them and make a paste thats it. And the freshness is so godly of this sauce.

Also, one pro tip i learned is par cook your pasta in boiling water and finish rest of cooking in pan. You would need more pasta water but this is so much better than boiling it in a pot and elevate your pasta game by a lot.

Chicken egg Noodles with Lemon Pepper chicken air fried…(too spicy but irresistible)

I love the Lemon Pepper chicken in air fryer, and since my cook didn’t come today, i quickly made this chicken noodles. What i also like to do is put remaining bits of marination on noodles while cooking and it elevates the flavor so much…🤌

Basil Pesto Pasta

Made this basil pesto pasta. Me and gf (long distance) both planned a pasta date and we both made a basil pesto pasta for dinner. It was delicious 🤌

I used instamart basil sauce hoping it will be genuine considering its price. But turns out they substituted pine nuts with cashew. So planning to make this again this weekend but with fresh homemade basil pesto sauce (its super simple, i have left over basil)

Tip: Get real Parmesaan cheese block (bit expensive but worth it)

Chicken Noodle Soup (Clear Broth)

Made a chicken noodle soup since I was craving it for so long ( i had my first in a korean malatang restaurant).

I couldn’t find any stock cubes in any instant grocery apps so made everything from scratch. It turned out to be really good

Edit 1: I am unable to comment due to minimum karma requirements so adding the recipe here.

Recipe

Ingredients:

  1. Aromatics (ginger, garlic, green onions, regular onions)
  2. Chicken (bone in please, since we are making soup)
  3. Noodles
  4. Soya Sauce, Salt, Sugar, Msg(optional)

Process:

  1. Drop your aromatics(ginger, garlic, green onions stems) in oil and cook for one min. Soups are all about aromatics.
  2. Drop your chicken. Seer it on both sides(1 min each)
  3. Post that put 3L or water (for 4-5 big pieces with chicken bone in, this works)
  4. Cut your onion in 4 big piece and drop. We just need the flavour from it and we will remove it.
  5. I also wrap the green onions green parts in a bundle and throw it in the stock.
  6. 3-4 spoons of soy sauce, 1 spoon salt, 1/2 spoon sugar and msg (optional, but tastes food).
  7. Simmer it for 20-30 mins. You will see scum on top. Please remove it. Its important. We need a clear broth.
  8. Take out the chicken pieces and shred them and keep the meat separately. I like to throw the bones back to extract more flavor in the soup.
  9. At this stage you are pretty much done. Cook your noodles till aldente on the side. Strain out of all water and put the noodles on the bowl.
  10. Scoop out clear broth soup and pour it in the bowl with noodles. Put chicken shredded we had on top. Garnish with green onions.
  11. I also like some peanuts and chilli oil so i garnish it with that. And enjoy :)

Also, if you like any veggies feel free to put them in the soup broth. Like i tried with mushroom and it turned out super good. But the above is the minimum but super tasty version of chicken noodle soup.
