Are the frozen vegetables you find in the freezer aisle healthy and recommended for everyday consumption or are these ultra-processed like other prepackaged food?

I’ve seen people talk about blood sugar, glucose, and carbs. I don’t understand because people say blood sugar raising is bad, but from what I understand, doesn’t eating anything raise blood sugar? Is food supposed to keep blood sugar the exact same number after every meal? Even healthy carbs raise blood sugar, but people also say you need carbs. Eating too long after a meal raises blood sugar but eating too short of a time also raises blood sugar, according to people. I don’t eat refined carbs or fats, or added sugars. I don’t know what to do; can someone please explain what I have to worry about now? I’m not diabetic and my bloodwork came back normal recently.
Is there any harm in eating too much carbs?
I eat plain oatmeal and that’s my main source of carbs; I cut out carbs from unhealthy food like fast food, greasy foods, or anything like that.
Hello, today I’m ate 3 boiled potatoes for one meal. How I prepared them was I literally just just put three potatoes in a pot with boiling water and let them cook. No salt, no butter, no oils, no sides. Literally just potatoes in hot water. Each potato contains about 110 calories each. So total calories amount was like 350-330. I won’t be doing this again because it gave me a lot of bloating because it’s been awhile since I ate potatoes. But is this healthy to do a least once? I’m also in a calorie deficit and haven’t gone over my limit.
