What Low-Lactose cheese melts well? (preferably not vegan)

I'm pretty sure I've become lactose intolerant recently, but I don't want to give up my grilled sandwiches. I've also been trying vegan cheeses, but they just don't taste the same to me. The cheeses I used to use would be Colby-Jack, Pepper-Jack, mozzarella, or Muenster if that matters. I also really like that Cabot "Seriously Sharp" white cheddar since it's lactose-free (I think), but I haven't tried melting it yet, and I'm worried it will take on a weird texture.
Does anyone have any cheeses that will fit this role? I don't have any better way of phrasing the question.
