Beef/chicken stock and cook time

When I make stock I usually let it sit at a low simmer for hours (at 12-24 hours for beef, 4-6 for chicken) to maximize the flavor from the bones and whatever else I have in there. The canning recipes I see for stock you simmer beef stock for 3-4 ours and chicken stock for 30-45 minutes.

Is this what people do? I know you're processing for 25 minutes, but I don't see how you're getting any additional flavor at that point. Bernardin adds carrots, onion, etc. like I do and does mention "For stronger flavour, simmer longer".

How are people making their beef and chicken stocks?
To be clear, I am asking about this when you are canning your stock.

I've purchased the extra rewards on the last couple of event passes because I didn't have the ships. This even pass, the extra rewards includes the Ise which I already own (and don't play because I don't like it). I'm assuming it's not worth buying the extra rewards if you already have the ship, but I was also wondering if there is compensation in lieu of the already owned ship. I'm sure any compensation wouldn't be worth 2,500 dubs, especially for a T6 ship.

Still, the question remains. Is the compensation for the Ise when you buy the event pass if you already own the Ise?
