What's a salad you can make in 'a boil it, peel it, cook it or forget it' place?

So, some years ago I and some people was in a place that had a large amount of bacterial gi disease and parasitoid disease. Naturally, we didn't trust local produce since we saw the diseases the local subsistence farmers got, and we lives by the above adage of boil it, peel it, cook it or forget it. However, one thing we were desperately missing when we were there was a salad. Like we got fruit, but the crispness and lightness and the freshness of a good salad was something we were really missing, and stewed greens weren't really doing it for us.

I may be heading out somewhere like that again, so I'm wondering if y'all had ideas for what I could make, especially with ingredient available in east Africa.

I suppose julienne'd carrots could be a good ingredient, as could daikon if there is any, but I'm looking for ideas.
